Sausage and Egg Pizza

It’s been a while…

But Eggy’s back! With an awesome pizza recipe πŸ™‚ So this is how it’s been. Basically after a long day of work, my usual routine has been to come home, eat ramen, and snuggle up in bed. Then watch Youtube, anything on Youtube. If I’m in desperate need for a good laugh, I’ll watch videos of the top greatest pranks (Invisible car seat anyone?) If I’m hungry or had a crappy meal at the cafeteria that day, I’ll watch hours of cooking tutorials to satisfy my craving of good food.Β  And lately, that is what I have had to turn to. So the other night I revisited Chef John’s Foodwishes channel, one of the first cooking channels I subscribed to years ago and browsed around his library. This caught my eye and seemed fairly easy to make, so I PROMISED myself to make some time to get back in the kitchen THIS weekend. Sigh, my hiatus has been way too long. Nonetheless, this was great and another added bonus is, you can eat it for breakfast, lunch, or dinner! ha haa

Ddak Dori Tang- Spicy Korean Braised Chicken w/ Potatoes

AndΒ  put your mouth on fire >=]. Okay so basically this is chicken from hell… Spice on top of spice on top of SPICE. Which is just how I like it.

Anywho, my lovely aunt (hello Insuk Emo!!) makes me this dish all the time whenever I come to visit Boston. So, this recipe is very dear to my heart…I remember always getting so excited to eat this en route to her cozy home. I FINALLY got to watch her make it first hand from scratch this past summer, and although I can make this dish whenever I want now, nothing beats my aunt’s dak dori tang… I guess its true… “made with love” makes a whole lot of a difference πŸ™‚

Paella

Tell me this doesn’t look like a fiesta…

So since I had absolutely nothing to do today (my favorite kind of day), I went along and made something super tedious and time consuming as such. Paella! Not only is it so beaoootiful, but deeelicious as well. And I had been meaning to use my special bomba rice that I had purchased in Barcelona this past summer! Paella is traditionally made with this type of short grained rice and it had taken me a trip to Europe to get my hands on some. Recipes online suggest using arborio rice (risotto rice) as a substitute but trust me, it ain’t the same. I’m suuure you can find Bomba rice in a specialty food store in some obscure neighborhood, but getting it from Spain makes this dish a lot special-er :P.Β  Sigh, I MISS BARCELONA!! ❀

Macaroni and Cheese

Nothing is as comforting as this…

Some ooey gooey mac n cheez. I love me some stick to your ribs good comfort food. And THIS, to me, is the ultimate comfort food. So I was bumming around at home today and was watching my favorite Youtube chef, Laura Vitale, and basically watching back to back episodes of her being a cooking god. Then I came across this, and immediately I started drooling and my stomach starting yelling at me 😦 And I realized, I could not fight it. So I had to make it. And I’m so glad I did.

Kimchi Fried Rice

Kimchi fried rice! With an egg on top of course ;P You know I’ve never appreciated quick and easy meals as much as I do now,Β  now that I’ve embarked on the working life lol. NOW i get it. I miss being able to leisurely prepare a slow-cooking extravagant meal, but now I must snap back into reality. So here’s another weeknight meal idea!

I used some marinated kalbi I had leftover as the protein part of the dish, but you can easily substitute with whatever YOU like (bacon, spam, chicken, etc.) I just especially get excited using kalbi in this because all that juicy marinade flavor gets mixed into the rice and kimchiness… yum. Try it if you ever have kalbi on hand!

Garlic and Herb Cream Pasta

I took a great after-school cooking class in 8th grade, and this was one of the recipes I learned and will cherish forever…

Garlic and herb cream pasta! The reason why I cherish this so much is because it is SO EASY yet SO GOOD! Who wouldn’t appreciate that? πŸ˜› All you really need is one key ingredient: Garlic and Herb spreadable cheese. Yup, that’s it. It’s sold in the specialty cheese section by the parmesan, bue cheese, etc. I’ve tried the Allouette and Rondele brands and they all taste the same to me. Just buy whatever’s on sale πŸ™‚

Now that you’ve got that, use whatever vegetables you have in the fridge. Broccoli is awesome in this and I had some mushrooms leftover, so in they went! Thin it out with a little bit of milk or half and half (or cream :O), and viola!, you got yourself a damn good cream sauce.
